8 absolutely amazing things to do when you go to Colorado - Metro

Colorado will take your breath away. The high altitude and equally high sun can make you gasp for air if you try something as strenuous as running up a flight of steps. When you run up a series of flights of steps, as I did to make it before closing time into the famous Red Rocks Amphitheatre, one of the most beautiful music venues on the planet, you might only find the energy for one sentence every twenty seconds. The more metaphorical breath-taking done in Colorado is by its wonderful scenery. If every geologist on Earth somehow died simultaneously in a freak accident and all went to heaven at the same time, their view from the clouds might look a little something like Colorado. It’s striking how many Americans you come across in Colorado who have settled there but aren’t natives. It draws out-of-staters in like cattle to a trough. MORE: 14 reasons to go to Denver right now – yes, right now. The Centennial State (named because it was granted its status in 1876, one hundred years after the signing of the Declaration of Independence) is the reason digital cameras were invented. You have to take the deepest of deep breaths and suck it in. Here are the 8 things that will take your breath away when you go to Colorado. Things to do in Denver. At first glance, with its wide uniform blocks and rather bland name, the city of Grand Junction might look like somewhere you should drive past on your way to Colorado’s more celebrated sites. An intriguing revolving project called Art on the Corner means there are more than 100 sculptures on its streets, from a giant apple core to a glistening silver bull. But the main reason to lurk on Main Street is to quiet that rumble in your tummy. Grand Junction is for grand munchin’. Lunchtime should be spent in the colourful Café Sol , where emptying the enormous metal bowl containing a scrumptious Cobb Salad is a challenge of Man v Food proportions. Wash whatever you can manage down with a Mexican Coke (not as thick as the American kind) to quench your first. Under the sink is a box of many-coloured chalks to encourage visitors to scrawl whatever graffiti they choose on the bathroom walls (there were some choice words for the candidates in the Republican presidential race when I visited). If you don’t eat anything between lunch and dinner (and I mean ‘don’t eat anything’), return to Main for Il Bistro Italiano , where the food is so massive and moreish it has inspired one of the waitresses to relocate for a year’s study in Florence. There’s such a large dollop of Italian heaven in the Prosciutto e Avocado dish, resplendent with spinach pasta, shrimp, Parma ham and avocado, that you wonder why she’s going to Florence at all. I don’t think the food will be as good. For a more refined eating experience in GJ, leave the magic sculptures of Main Street behind and gravitate up a block to Rood Avenue, where 626 on Rood will titillate your taste buds like they have never been titillated before. Go local on the wine front with the Elevation Colorado flight, giving you a taste of three different reds grown in the region – the Petite Sirah from Denver winery The Infinite Monkey Theorem was my favourite. There’s something a bit more raucous in the air up at Bin 707 Foodbar , and a perfect dessert to fit in with the atmosphere. A few seconds after this bizarre but brilliant dessert arrives, you feel something else entirely: pure sugar-coated bliss. Wine (and whiskey) paradise in Palisade. Watched over by the imposing Mount Garfield (a piece of landscape so wonderfully outlandish it looks like it belongs on Mars), is the peachy town of Palisade , a pretty little hothouse in the Grand Valley. If you want to grow something in Colorado (that isn’t marijuana), this is your heaven on Earth. Famous for its peaches, which reach ripeness through August and September when you simply to have one (or five), Palisade is also wine country. And the best way to tour the wineries is by hopping on your bike. Okay, not your bike, but a bike from Rapid Creek Cycles on Main Street, where Rondo, the owner, will hook you up with mountain bikes, simple.
