Spicy Mushroom and Spring Onion Toast is a quick and easy snack to put together for breakfast or tea. For those who love spicy Asian flavours and mushrooms, this is a guaranteed hit. It makes a great after-school snack if served as a closed toasted sandwich, and also a delicate appetizer if served as open toasts for a dinner or tea party. It takes little prep, but has wonderful results in term of presentation and flavour. Serving suggestion: This spicy mushroom and spring onion toast is best served hot. if you are prepping for a tea or dinner party, you can make the spicy mushroom and spring onion mixture ahead of time. Toast the bread when you are ready to serve, and top it with the warm mixture and serve immediately to retain maximum flavour and avoid the toast turning soggy. Equipment used: Toaster. 200 grams mushrooms, sliced. 1 small onion, finely chopped. 4-5 stalks spring onions, finely chopped. 2 cloves garlic, grated. 1 teaspoon white sesame seeds. 1 dry Kashmiri red chilli, deseeded and chopped. 2 teaspoons red chilli-garlic sauce. 1 teaspoon tomato ketchup. 1 teaspoon dark soya sauce. 1/2 teaspoon vinegar. Directions for Spicy Mushroom and Spring Onion Toast. To begin making the Spicy Mushroom and Spring Onion Toast, we must first prepare the mushroom filling. Warm a teaspoon of oil in a pan and add the sesame seeds, chopped dry red chilli and ginger garlic paste to it. Drop the finely chopped onions and sauté for a minute till they are pale and soft. Next add the red chilli-garlic sauce, tomato ketchup, soya sauce and vinegar. Mix together till it forms a shiny glaze. To this, add the mushrooms and spring onions, saving the spring onion greens to be used at the end. Toss together so the sauce coats the mushrooms and spring onions. You should be left with a dry mixture. Add freshly ground pepper if you want an extra hit of spice and combine. Garnish the mixture with half the spring onion greens. Toast your favourite sliced bread in a toaster or oven and spread the slices out on a platter. Sprinkle the leftover spring onion greens over the Spicy Mushroom and Spring Onion Toast and serve immediately. Our kitchen is small, but functional. Lots of storage space in cabinets, a good sized refridgerator/freezer, a sink and 2 burner stove. We opted to not get the default microwave in preference for additional storage space. Instead, we bought a small toaster oven for baking. We also used the brilliant idea from our friends and fellow Oliver owners - Sherry & Paul - of using suction cut bins to organize kitchen plates, spices, etc. So far, they've worked beautifully.

I wanted a crust for some meat I was cooking tonight and had seen Michael Smith's Kitchen earlier this week and used an idea from there. I took two rashers of bacon, cut them into bits and fried them crisp. I took a whole wheat English muffin and made crumbs from it in my blender. I took about 2oz of old cheddar cheese and cubed it. I tossed the cheese and the bacon bits and the bacon fat into the blender with the crumbs and gave it a good mix. I pan fried the meat until almost done, then put it onto a rack with the crust topping into my toaster oven for 10 minutes at 350*. This ten minutes finished the meat and turned the topping into a crust. I deglazed the pan with red wine and a bit of cream. The beans were blanched and then quickly tossed in a garlic butter sauce. The potato was just a basic baked potato.

Oh man. After 3 weeks of having fun it's back to real life. We were still staying at Kim's aunt and uncle's and had most everything we owned still waiting for us to be cleaned. Here's our toaster oven. It looks a little wet but I don't know whether this is before or after I tried to clean it. Needless to say, we threw it out along with a bunch of other appliances. We didn't even know if they still worked but they wouldn't come clean and we really didn't like the idea of cooking all that soot into our food. The tally for damages goes higher.
